Fish curry is a popular Indian dish made with tender fish fillets cooked in a rich and flavorful tomato-based sauce with a blend of aromatic spices. Here's a recipe for fish curry:

Ingredients:
- 500 grams fish fillets, cut into bite-sized pieces (you can use any firm fish like salmon, cod, or halibut)
- 3 tablespoons vegetable oil or ghee
- 2-3 green cardamom pods
- 2-3 black cardamom pods
- 1 cinnamon stick
- 2 bay leaves
- 1 large onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 2-3 green chilies, slit lengthwise
- 2-3 medium tomatoes, pureed
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala powder
- Salt to taste
- Handful of chopped fresh cilantro leaves for garnish
Instructions:
- Heat the oil or ghee in a large pot or Dutch oven over medium-high heat. Add the green cardamom pods, black cardamom pods, cinnamon stick, and bay leaves, and sauté for 1-2 minutes or until fragrant.
- Add the chopped onion and sauté for 4-5 minutes or until the onions turn golden brown.
- Add the ginger-garlic paste and green chilies, and sauté for 2-3 minutes or until the raw smell goes away.
- Add the pureed tomatoes, red chili powder, coriander powder, turmeric powder, cumin powder, garam masala powder, and salt to taste. Mix well and cook for 10-15 minutes or until the sauce thickens and the oil starts to separate from the sauce.
- Add the fish pieces to the pot and mix gently to coat the fish with the sauce. Be careful not to break the fish pieces.
- Add enough water to cover the fish pieces and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 8-10 minutes or until the fish is cooked through and flakes easily with a fork.
- Garnish with chopped fresh cilantro leaves and serve hot with steamed rice or naan.
