Fish curry is a popular Indian dish made with tender fish fillets cooked in a rich and flavorful tomato-based sauce with a blend of aromatic spices. Here's a recipe for fish curry:

Ingredients:

  • 500 grams fish fillets, cut into bite-sized pieces (you can use any firm fish like salmon, cod, or halibut)
  • 3 tablespoons vegetable oil or ghee
  • 2-3 green cardamom pods
  • 2-3 black cardamom pods
  • 1 cinnamon stick
  • 2 bay leaves
  • 1 large onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2-3 green chilies, slit lengthwise
  • 2-3 medium tomatoes, pureed
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • Handful of chopped fresh cilantro leaves for garnish

Instructions:

  1. Heat the oil or ghee in a large pot or Dutch oven over medium-high heat. Add the green cardamom pods, black cardamom pods, cinnamon stick, and bay leaves, and sauté for 1-2 minutes or until fragrant.
  2. Add the chopped onion and sauté for 4-5 minutes or until the onions turn golden brown.
  3. Add the ginger-garlic paste and green chilies, and sauté for 2-3 minutes or until the raw smell goes away.
  4. Add the pureed tomatoes, red chili powder, coriander powder, turmeric powder, cumin powder, garam masala powder, and salt to taste. Mix well and cook for 10-15 minutes or until the sauce thickens and the oil starts to separate from the sauce.
  5. Add the fish pieces to the pot and mix gently to coat the fish with the sauce. Be careful not to break the fish pieces.
  6. Add enough water to cover the fish pieces and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 8-10 minutes or until the fish is cooked through and flakes easily with a fork.
  7. Garnish with chopped fresh cilantro leaves and serve hot with steamed rice or naan.
